Try introducing him to other foods that have cheese in or on it. Macaroni and cheese, cheeseburgers, rice with melted cheese, etc. Also, ask your pediatrician about this, it could just be a phase he’s going through, in which case you really don’t have to worry, but still, ask the doctor to be sure and get some kind of recommendations from him/her.
Try combining the cheeses with other foods for instance make him/her a grilled cheese sandwhich on whole wheat bread. Another option may be some scrambled eggs with a piece of whole wheat toast with some strawberry preserves. The best thing you can do with a picky eater is to expose them to as many foods as possible. Putting some cheese sauce on a vegetable like broccoli might be a good way to introduce more healthy choices with something they already like.
Have you tried checking out those cookbooks (there are two that I know of, one by Jessica Seinfield) about sneaky ways to get vegetables and whole-grains, etc. into kids’ food? That may give you some ideas. Also, if your child likes cheese so much, you can cover a lot of things (chicken pieces, vegetables, rice, whole-wheat noodles, etc.) with a cheese sauce if that would work. You didn’t mention how old your child was but you could spend the summer teaching him all about nutrition (on his level) and the different food groups and the recommendations, and what each food does for the human body, and what happens if you don’t get proper nutrition, etc. I’m sure the library has some children’s books on the subject.
You could put cheese on or with different foods. For instance, cheese on brocolli, celery, potatoes. Yogurt with fruit, just tell them to dip in in the yogurt, its really good.
