How Can I Diet Without Slowing My Metabolism?

I want to lose weight, but I hear dieting slows your metabolism, and I don’t want it to slow down!! How can I eat less without slowing down metabolism? So far I have been having a lot of salad and lean protein… what else do I need?
Also, how much carbs should I have in a day? Like a sandwich, is the bread from that enough carbs? Too much? If someone gives me a good carbs to protein to veggies ratio I would be very greatful

Carbs requirements is very difficult to explain because you have to consider your height and weight without sacrificing your health. But i think 1/2 cup of rice per meal is all that the body needs without starving.
